what we ate

i got kind of bored with my weekly meal planning posts and quit doing them. that and i kind of got bored with cooking period. i think i was just a little overwhelmed for a little bit. but, now i'm back in the swing of cooking delicious food for my family every night most nights. i got a great idea to spice up these posts. i will take pictures of all our meals from the previous week and then post them on sunday.

monday:
egg-in-a-hole grilled cheese sandwich with a side of goat cheese grits.

sandwich recipe can be found {here}. i did not like this sandwich, but it could have been good. i did not bake it in the oven long enough and the white of the egg was too runny. i love a runny yolk but like the whites to be nice and firm.

goat cheese grits recipe:
instant grits, cooked according to package directions
1 log of goat cheese
a little milk or heavy cream
basil, chopped to taste
mix it all up and you got a yummy, healthyish side

tuesday:
taco salad: shredded iceberg lettuce, satueed red, orange, and yellow bells, pinto beans (from can) heated on the stove top in a little olive oil with minced garlic and fresh jalapeno, homemade guacamole, shredded cheese, and jarred salsa
steamed kale and cheddar baked quesadillas

wednesday:
creole tilapia
cashew pesto over orzo

creole spice recipe {from tupelo honey cafe cookbook}:
1 tbs sugar
2 1/2 tsp sea salt
1 tbs smoked paprika
2 tsp cayenne pepper
1 tsp ground pepper
1 tsp white pepper
combine ingredients and put on anything. makes 1/4 cup

thursday:
campfire squash over brown rice
fresh green beans topped with toasted almonds

campfire squash recipe:
4-5 squash, sliced
1 medium sweet onion, quartered
1/2 stick butter
put all in a tin foil pocket and close. cook on the grill at 350-degrees for 30 minutes.

green beans were boiled for about 15 minutes. while they were boiling i toasted the sliced almonds. i tossed the green beans in the skillet with 1 tablespoon of butter and topped them with the almonds.

i also had planned to make eggplant croquettes on friday night, but napped with elle after going to the pool, for 3 hours! woke up and it was too late to make dinner because we were all starving. so we went out instead. making the croquettes tonight so i'll share the recipe next sunday!

  1. You're so cooking-creative. I am entirely too boring but I do love to cook now, which is shocking since I used to LOATHE it! ;-)
